RECIPE: Wild Thing Soup

sally_growerJanuary 7, 2009

This is a wonderful soup the is easy to make and easy on the waist line. Maybe this will help with some New Years Resolutions.

Wild Thing Soup

2 Chicken Breasts, grilled and cut into chunks

3 T instant chicken bouillon

8 oz. fresh mushrooms, sliced

2 cups carrots diced

1 Box Uncle Ben's Long Grain & Wild Rice

1 bunch green onions

2 T margarine

2 cups celery diced

Pepper to taste

8 servings

Bring about 8 cups of water to a boil. Add bouillon, carrots and celery. Cook vegetables until tender, about 15 minutes. Add rice (Do not use the seasoning packet n the Uncle Ben's Box) and simmer about 20 minutes. Sauté mushrooms and onions in margarine. Add to broth. Cut chicken to bite-sized pieces and add to the broth. Heat back to a simmer and serve.

My notes: I add 2 Tbls chicken base to water and cook the chicken breast to make a rich stock

Sally, this sounds good. I have a question that may seem a bit daft...did your final note mean that you cook the two chicken breasts in the 8 cups of water (and not use grilled chicken)? Ann

Ann, Sorry for the confusion. Yes, that's what I meant, you can either use left over chicken or cook the raw chicken in the water. It makes a richer soup if you start with the raw chicken, but it's really quick to make the soup with already cooked.

You are most welcome. Glad you liked it. I'm fixing it right now for dinner tonight.
