Have a new recipe for ya that I tried today!
Thought I'd share a recipe I made for potluck, today, and it was delicious.
Pic is as I was ready to put in oven.
Original name for recipe is cheesy chicken and rice casserole but I renamed it to Caribbean Jerk chicken.
I had some leftover shredded chicken that had been marinated in Lawry's Caribbean Jerk sauce so I used it for the two cups in recipe.
2 cups leftover cut-up chicken preferably shredded
2 cups cooked white rice
15-oz can black beans, drained and rinsed
8 oz sour cream
1/2 cup salsa medium heat
1 cup shredded cheese (I used a blend of shredded cheese from WalMart)
salt and pepper to taste
Combine all the ingredients (saving out some shredded cheese for the topping) and spread it into a casserole dish.
Sprinkle the remaining cheese on top and pop it in the oven!
Bake at 350 degrees for 25-30 minutes.

Took the the leftovers to my grandson's mother and she left message on Facebook that it was delicious :o)
