Softener Sizing for Efficiency

Above are my actual water usage numbers from my local provider for the past 3 years (not sure about Nov 2011). Sorry if it's tough to read, can't seem to get the formatting correct on here. Average has always been below 3,000 gals, but there have been peaks up to 4-6k gallons. The 4,000 spike this year was from using the hose to water a few small areas of new sod, so was an anomoly. I can't remember if there were any specific reasons for the spikes in the past. We installed a new washing machine last year, so might be the reason for the decline in usage, also a new dishwasher this year (not sure if it's supposed to use less water or not). 2.5 bathrooms, 2 people, never have any guests. City water, hardness is 23 GPG and we were thinking of going with the Fleck 5600SXT 40,000 grain w/1.25 cu. feet of resin. Will this be large enough for efficient salt and water use? Assuming regeneration 7-10 days. Thanks in advance....
