I am reading the sale flyer for HMart, the Asian grocery store. On sale is beef short rib/LA. What does the "LA" mean? All the short ribs have this.
Same orientation as flanken cut, but thinner and a shorter "less bones" cross section. IIRC think LA is 3 ribs across.
Foodonastump is correct. It refers to flanken style beef ribs. LA stands for Los Angeles where Korean LA galbi was made popular. I make a batch for galbi every few weeks. We call it Korean Bacon because it is so good and you can't stop eating it!
