broccoli and potato soup

Broccoli & Potato Soup
2 tbs. butter
ý c. fine chopped onions
ü c. self rising flour
2 c. chicken broth
2 c. plain milk
10 oz. frozen broccoli cooked - drained
1 ý c. cooked mashed potatoes
1 c. shredded cheddar cheese
ü tsp salt
1/8 tsp black pepper
Using a pot add butter and onions over med heat and cook until transparent. Blend up broccoli in food processor or chop fine and add to pot. Now add flour to broccoli mix and lightly brown. Combine milk and chicken broth and whisk in. Now add cooked mashed potatoes and cheese to your mix and cook until slightly thickens. Reduce heat add salt and pepper and cook on low heat for 10 min. Serve with favorite crackers or cornbread. Enjoy p/s add left over ham is good too.

Thanks. That sounds great. Yum. I'll keep this recipe for next winter. I'm really hoping spring comes soon and I can quit with the soup. LOL.

That soup sounds really good. I am wondering what the point of using self rising flour and not just all purpose flour? I seldom have self rising flour on hand and don't see the reason for having baking powder in the recipe. Sure sounds good though. Will have to get some broccoli and try it.

Hmmm...never even thought about the self-rising flour issue... I keep both on hand, just for this reason. When a recipe calls for one or the other. I guess it would not matter. Mr. Joyful guy, that was a good funnie!! LOL
