Rosemary, garlic, parmesan and olive oil on a ww/bread flour crust.

BB - There is a crispness and a hint of smokiness that I never would get inside. Boy does this oven get hot - 1.5-2.5 minutes from dough to briquet. LOL. I need to come up with some kind of door in order to attempt bread. and a thermometer...

Linda - enjoy your pizza bianca! I guess it's not quite PB. The kind we would get in Rome when I was a kid was cheese-less.

agmss, how long did that take to bake? It looks nicely crunchy, I like thin crusts, nearly "cracker-like".

Elery plans to build one, so I'll be interested in your experience with this.

It took about 2 minutes. The crust was crisp/chewy if you know what I mean. I made some much thinner flat bread with onions and poppyseed last night too. Snacks for watching the results come in...

My neighbor who helped me build this wrote a book called 'Bread, Earth and Fire'. He was very generous with his time. I have tons of photos of the process - I will try to get some online. I also have a materials list if anyone is interested. Evidently my oven will be in his next version of the book.

The peel is bamboo. I need one with a longer handle. Since my sister and I just bought the contents of my dad's woodworking shop I think we should be able to make one. Nonetheless I find it a bit daunting.

Beautiful !! If you want a lot of advice and great recipes and ideas for how to use your oven in a sequential way from pizza to stew , go on over to The Fresh Loaf and use Sylvia as the search word. She has tons of pics and recipes that she does in her wood fired oven . She has been doing it for several years and can give you lots of tips. She is as sweet as the day is long and most generous. c
