We are going to my sister's house for Thanksgiving and I had already purchased and started to thaw our bird. (long story)Anyway, I cooked it last night and now have 10pounds of bird left, very little freezer space. Anyone can cooked turkey before?
No, don't do it. Here is a link to a VERY reputable site that discusses canning meat.
If you must can meat, you MUST use a pressure canner. No exceptions.

It's Tuesday ...it will easily keep refrigerated until Thursday. Canning is not an option as far as I'm concerned...not for two days.
I've canned chicken, but not turkey. I'm assuming it will be similar.
The only problem I had was that pressure canning (which you must do if you're going to can it) left the chicken a bit mushy and yet stringy. I'm very weird about texture, so I didn't like that very much.
It wouldn't be my first choice, but it can be done.

Felecia - too bad your freezer space is limited. I would say there must be something in that freezer that needs to be tossed to make room for some of that turkey! :-)
