Should indoor pine T&G be painted/stained/finished on all 6 sides as you would exterior T&G?
My carpenter tells me it's fine to put it up and just coat 2x with it up. I just don't want to blow this. Don't want cupping.

Like beadboard? You need to have paint on the tongues for when it shrinks, so bare wood is not exposed. Much easier to paint on the bench to get into the beads. If T&G like flooring, then paint after install.
This just happened to us -- t&g on walls cupped after paint. It is being fixed, this time they will back-prime before install. We were told usually it is not necessary but our house is very tight and all the windows had been closed and taped off for painting. Good luck!
