Do I peel eggplant?

catherinetOctober 21, 2007

Hi all, I

I'm making eggplant parmesan, which I haven't made in a long time. I thought I used to peel the eggplant, but none of the recipes I'm finding actually say to peel it. Should I? Thanks!

Eggplant certainly doesn't need to be peeled, however I tend to decide that if it's large thick skinned I peel, small & thin skinned then I don't bother.

I very seldom peel eggplant. It would have to have a very thick skin before I would peel it.

I tend to peel but I think I haven't had a nice thin skinned eggplant.

I don't peel - the salting at the beginning takes care of any bitterness, for me at least. I haven't made that in a while, and it's one of my favorite recipes, especially when made with Panko.
