Okay, is there an LED spotlight that works from 9' up?

Is there such a thing? How many lumens would one need to light up a countertop from a 9' ceiling? I have no cabinets flanking my stove and need task lighting that is unobtrusive. Can anyone point me in the right direction?

You'd want to light the counter top with ~ 30 - 35 lumens per sq ft. The Cree BR30 could be used or a high output CR6 / LR6. The CR6 and LR6 are recessed. The LED recessed guide discussion on this forum has more interesting stuff.

This may work for you. We just had demo of this product and they looked pretty good. Sounds like what you're looking for.
