Subbing Zucchini in a recipe
We still have a few bags of grated zucchini in the freezer from last year's garden. DH made a really rich dark chocolate cake using some last week. I would be silly not to expect an excess of squash this year as well, which got me thinking that I should really try to come up with more uses for it.
Last night I made my beloved Som Tum (Green Papaya Salad) and subbed zucchini for the green papaya. Guess what? I love it! Since the green papaya really doesn't have much in the way of flavor, being merely a vehicle for the rest of the ingredients, I figured it was a good bet the zucchini would do the same, and I was right.
Just thought I'd share in case anyone else might want one more use for excess zucchini.
