Tex Mex Dinner and Breakfast

Matt is home for a few days so I've been making his favourite meals.

Last night was Tex Mex.

Steak Fajitas

Grilled New York Strips, grilled onions and peppers with homemade corn tortillas, salsa and guacamole.

I used the leftover corn tortillas to make today's breakfast.

As you know, this is the food I grew up on, and so it's one of my favorites also. I especially like Mexican breakfasts. I'll bed that ingredients are a lot easier for you to find now than they were for me in Vancouver in the mid to late 1970s.

Lars, the only ingredient that I need to find is the masa harina to make the corn tortillas. There is a wonderful little Mexican store in Victoria and I can pick it up there. Other than that, everything else is readily available.

Yum Ann!

I've never been happy with flank steak for fajitas...then again, as you know , I am not much of a beef person. But I think I could do a New York Strip.

I don't like flank steak either. But I like fajitas. I've used both NY Strips and Rib eyes.

Yum, Ann, those both look delicious, lucky guys, both of them.

You know, I can remember a time when I detested avocado. Now I love 'em. Go figure, and that happened in the span of the last 10 years. I keep reminding myself of Renee's 7 year rule.
