Maple Oatmeal Pastry Recipe

Annie, Here is the recipe.

This is a very easy pastry dough to work with. Rolls out beautifully every time.

I tend to use this pastry when I make galettes or open faced tarts.

Maple Oatmeal Pastry

2 cups all purpose flour
2 tablespoons oats
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup unsalted butter, cut into pieces and chilled
2 tablespoons sour cream
2 tablespoons maple syrup
Might need to add a little ice water.

Preheat oven to 350 F.
Combine flour, oats, baking powder and salt in a bowl. Cut in butter the texture of coarse meal. Stir sour cream and maple syrup and add to dough, Mixing until it just comes together. Chill dough for 15 minutes.

Oooh, I like this one. I was going to try the basic one Ina Garten uses but it didn't really grab me. The oats, sour cream, and maple syrup are just the ticket!

AnnT, this looked so good I checked your blog to see if you had additional directions for completing the galette i.e. How much fruit filling to use for that amount of pastry and what temp to bake & for how long.

If you could give me that information, or direct me to it, I would much appreciate it.

Alex, I bought some maple syrup this week, just for this pastry. I still have rhubarb in the garden and I'm thinking Rhubarb Galettes.

Amck, There is enough dough to make a double crust pie. So you could make two regular size galette or three smaller ones.

When I make a galette, I just kind of wing the filling when it comes to the amount needed. A regular fruit pie filling will easily do two galettes.

Bake at 350ðF, until golden brown.

I almost didn't open this -- it didn't sound that appealing to me, That may be silly since one of my favorite scone recipes has oats in it, but I was picturing a shaggy pastry dough. It's not that much oats. Now I'm going to have to try it. .Thanks for sharing.
