Strawberry Mint Ice Cream

Making more herbal ice cream -- added mint to strawberry ice cream. Very good!

And very easy --

28 oz. milk/cream (I used 8 ounces cream and 20 ounces of whole milk -- because that is what I had)
1/2 c. sugar
1/2 t. vanilla
1 T. chopped mint
1 cup chopped strawberries, roasted and cooled

Mix milk, sugar, vanilla and mint and pour into an ice cream freezer (making sure the milk is really cold) and process according to freezer directions. About 2 min before ice cream is done, add chopped strawberries and finish processing. Put into a freezer container and put in freezer to harden.

Martha - tell me about roasting the strawberries. I don't plan to make ice cream. But I did have a lot of berries last year and would like to do things with them other than snack on them. I might try making strawberry liquer.

How do I roast them and what else can I do with them?

Just put them on a sheet pan in a 400 degree oven for about 10 minutes. It does intensify the flavor. I've not made strawberry liqueur but I've made peach and orange and strawberry would be really really good. Like spring in a glass! I do use a couple of cups for my tutti fruiti every spring.

Wonderful looking ice cream.

Good timing. I have my Lemon Balm coming up everywhere. I am going to use that instead of Mint.
