I've never tried them before but the small tree in our garden has fruit on so would be rude not to use them for something :o)

Oh, I really envy you. Anything with Quince is great in my opinion. I love Quince Jam (not jelly), Quince marmelade, quince and lemon drinks, multiple quince and lamb dishes. I don't usually have a recipe for meat dishes, just mix things as it seems right :(, but something like in the attached link should be good.
I do similar dish, but use fresh lemon juice instead of vinegar and terragon instead of rosemary and oregano.
