Count down to Derby Day!

Many of you might remember that the Run for the Roses (aka The Kentucky Derby) is a big deal at my house. In keeping with tradition, we are prepping for the big day this Saturday - complete with a Hat Parade, friendly wagering, a few libations and of course, enough food for all. It is kid friendly, so I try to keep a little balance in the menu - not all is adult oriented. There are some dishes that are a "must have" and each year I try to swap a few out and a few new ones in. The menu - which is open for discussion, I will asterisk the few dishes that are "must haves" - is below. Please feel free to offer suggestions, alternatives or recipes for any of the dishes listed, I am open minded on most of it!

Thanks you again for allowing me to share this event with you - I am hosting for the 27th year (long before DH and kids) and it has become hugely important to me over the decades. Oh, and we are expecting about 60 - 70 people.

3 flavors of Hummus & pita chips, pretzels
Caprese on a toothpick
Crudite and dip in bread cups (a Martha thing - too cute)
Mexican 7 layer dip & tortilla chips
fruit tray (strawberries, grapes, pineapple, melon, blueberries, oranges)
*ABT's (jalapenos stuffed with cream cheese, wrapped in bacon, BBQ sauce and grilled)
*Waffle fries topped with roasted garlic aioli and truffle oil
Chicken Nuggets
*Mini Chicken & Waffles
Crab Rangoon in Phyllo Cups
Deviled Eggs (may do curried with mango chutney, may do plain)
Tossed Salad

Nanner Pudding
Rose Cupcakes
Ice Cream Sandwich Layered dessert thing (IC sandwiches, PB, Chocolate syrup, whipped cream, chopped peanuts)

Sweet Tea
Mint Juleps
Pineapple Mojitos
Full bar (for anyone who doesn't like the above)
Hot Tea

How about mint brownies in place of regular brownies? While a good brownie is a thing of beauty, I have made them with mint in different ways - adding cut up mint chocolates to the batter, putting a thin mint frosting on top - sometimes by itself, or under another layer of chocolate frosting.

It sounds like everything is meant to be finger food? How about mini-spanakopitas and/or mini-tiropites? Or spring rolls? You can make the spring rolls vegetarian or not.

It sounds great to me! I love your roses cupcakes, so beautiful!
If you were to change anything, I would add bbq pork sliders instead of something as you have a lot of chicken, but I do love chicken...

Thank you for the suggestions. I do like mint a lot, and it would be great in the brownies. Hot Browns may be traditional, but messy and hard to serve for a crowd I'm afraid.

And thank you Beez... those rose cupcakes are hugely popular for Derby Day. I was including chicken nuggets for the little people that will be here, but pork sliders might be a great substitute.

Alexa, I was thinking of you this week when I was rummaging in the attic for a hat to wear on Saturday that would go with "business casual" attire but still look like a Derby Hat.

Your menu looks great, as always. I remember the rose cupcakes. If you want to incorporate fresh mint, you could have shooters of minted green pea soup. I just returned from vacation and one of the outstanding dishes was deviled eggs with crabmeat, snipped chives and (tasted like) Dijon mustard mixed into the yolks. The mini chicken and waffles sound like a fun dish too.

I hope you and your guests have a wonderful time and pick the winning horse.

Thanks again everyone - FOAS, I am linking to Marthas website which shows the cute little bread hunks, you put the dip in the bottom and the veg in the hollowed out bit. Someone suggested putting a little of everything in each "cup" and I think that is what I will do.....

Wow, after seeing what you are serving,I wish I could be there! One of these years I will surprise you. I am up to my elbows with the library plant sale this weekend.

Thank you so much for asking!

The party was great - had a few last minute cancellations since there was a softball tournament the same day and their kids were on teams that kept winning, but I am thrilled that the girls did well so it was all good.

The menu was everything listed above, except I skipped the ice cream sandwich thing - it was overkill, and I am glad I did. Several friends (who know me well) know that dessert is usually not my thing, so they all brought desserts! The contributed a pecan pie, a walnut caramel cheesecake (OMG it was delish!), a strawberry cheesecake, and a huge plate of chocolate chip cookies and chocolate covered pretzels.

Everyone had a blast and the hat parade was a riot. My GF had been in San Diego on business a few weeks earlier and bought a fascinator there. It was incredible - purple, black illusion lace, black feathers... just amazing and she looked so beautiful in it. I was happy she won, since she has had a tough year battling breast cancer.

I am already looking forward to next year!
