Match Species of Hardwood Floor to Trim

I'm meeting with my builder on Sunday and I need to be able to give him at least rough specs of what I want for flooring. I know that I want strip 3/4" hardwood flooring throughout the main level, other than the baths and mudroom. But I'm trying to decide on species and color knowing that I'm planning to do red oak trim and doors as I'm trying to stay with stock millwork. I'm going for a Craftsman look overall so the doors will be 2 panel and the base trim will be 3 1/4". I'm also planning to do quarter sawn oak for the kitchen cabinets. I'm looking at 2 different cabinet makers-- one does quarter sawn red oak and the other does quarter sawn white oak.

For floors, I was leaning towards red oak, quarter sawn if I can find it within my budget. I've also looked at white oak, red birch and hickory. I have a labrador so I would like to get the most durable finish possible.
