After I made corned beef, I saved the corned beef juice and corned some pork.
Came out very nice. You should give that a try.
I made this once from Julia Child's recipe. It was good, but not worth all the effort IMO. Yours looks delcious!

Actually, 'ham' and 'corned beef' are quite different.
Ham doesn't have the spices, for one thing.
And that is what I'd like to see commercially available.
Pork cured the same way as corned beef.

dcarch - I do agree with the others that this looks delicious. I might not have admitted I recycled the brine though. yyyyyyyyyahhhhh! Come on, man, the salt and spices are cheap! But I digress. Good looking food, nice presentation.
Actually corned beef was a new England thing....and the Jews adopted it as a Jewish answer to ham....
Pastrami is another sort of brined and spices beef brisket
