RECIPE: Ice Box Fruit Cake

becky_caDecember 17, 2003

I got this recipe off of another list and made it a couple of weeks ago. we've really been enjoying it, so thought I'd share it here :-) I didn't have Brazil nuts so used cashews instead (macadamia nuts would be good, too). I used the food processor to grind the cookies into crumbs and chop the fruits, and next time I'll use the processor to chop the nuts too, since they should be pretty small.

Don't let the "fruitcake" name scare you off LOL.

2 cups chopped pecans

2 cups chopped walnuts

1 lb candied cherries -- chopped

1/2 lb candied pineapple chopped

Refrigerate at least 24 hours before cutting.

**I usually make this mid-November and freeze and serve throughout the

Sounds interesting- our neighbor in Germany made a fruitcake for us one year and like many people, I don't care for the standard fruitcake but this one was excellent. Was a white one and had candied pineapple, nuts, and red and green candied cherries. Will have to give this one a try.
