LOOKING for: Airy type cookie

My quest is hard to explain, but I'm trying to find a recipe for a very "airy" type cookie...a sugar cookie of some type I'm guessing.

They're not like what you'd find at the grocery stores with the icing...they're concave/convex (?) shaped with tiny air pockets and have a sheen to the surface of the cookie.

What a description, hey?! They're pretty crumbly once you bite into them, and have that "airy" consistency throughout the cookie.

Does anyone know what kind of cookie I'm talking about so I can try and do a recipe request/search? I can't really recall where I've had these, all's I know is I really liked them and have been trying to find a receipe ever since.

I think you are talking about a meringue cookie -there are many types of recipes for these cookies. One of my favorites (which I make every Christmas) is Carribean Lime Meringue Cookies

2 large egg-whites
1/8 tsp. salt
1/2 tsp. vanilla extract
3/4 cup sugar
1 cup flaked coconut
2 tsp. grated lime zest

Preheat oven to 325. Beat egg whites and salt until soft peaks form. Beat in vanilla. Gradually add sugar and continue beating until soft, glossy peaks form. Fold in coconut and lime zest. Drop cookies by rounded tablespoonfull onto greased cookie sheet. Bake 15 to 20 minutes JUST until peaks on meringue have turned golden. If you allow the entire cookie to turn tan, you have overcooked a bit.
