RECIPE: Salba Energy Cookies

I created this recipe to replace the protein bars I had been eating for snacks at work. Salba is an ancient Aztec grain, which is the new craze in health food. It is also called white chia.

Salba Energy Cookies

l stick of butter, + 2 tablespoons

4 tablespoons cocoa

1/8 teaspoon cinnamon

1/3 cup of brown sugar

1/2 cup of white sugar

1 egg

1 teaspoon vanilla

1 cup of white flour

1 teaspoon baking soda

dash of salt

2 tablespoons of white chia seeds (salba)

1/2 cup of chocolate chips

1 cup of chopped walnuts

Drop cookies by teaspoonful on parchment paper covered cookie sheet. Bake at 325 degrees for 10-12 minutes. The cookies do not spread out. They keep nicely for a week. Two cookies provide energy (without sugar lows) for about three hours.

Lorna, will these make hair grown on my chest? lol Really, the recipe looks wonderful. Is this the same chia as used in the infamous Chia Pets on TV?

Oh, bite your tongue, SeattleSuze! If you grow any hair on your chest from these cookies, I'll take the Fifth!!

I think the chia pets use black chia, which is a different variety. Only the white chia is being touted as a super energy food.
