RECIPE: Mennonite Fruit Dessert

Whenever I am looking for a large dessert to take along to meetings and such, this is the one I always turn to.

Cake layer:

2c all purpose flour

2 tsp baking powder

1c sugar

1/8 tsp salt

1/2 c butter

1c milk

2 beaten eggs

2 tsp vanilla

Fruit layer

fresh or frozen unsweetened fruit of choice-apples, peaches, berries, apricots, plums, etc.

Topping

1/4 c melted butter

3/4 c all purpose flour

3/4 c sugar

Blend flour, baking powder, sugar, salt, and butter in a large bowl. Stir in milk, eggs, and vanilla.Spread in a well greased jelly roll pan (17x11x1"). Cover with fruit of choice. Combine topping ingredients until crumbly. Sprinkle over fruit and bake at 375° for 30-35 minutes.

Yields: 40 squares.

Hey, it doesn't have raisins in it either! I bet it would work with our local fruit too.

Roselin, I can use this for sure for our family gatherings.
Would it work with fruit combinations also? Or do you recommend just one type of fruit be used?

Marlen, go ahead and use whatever fruits you want. Since we have peach and apricot trees, that is what I usually use but any fruit or combination should work just fine.

Apricot and peaches-but when we have a good crop, I never feel lucky!
