I'm looking for a good Oatmeal Raisen Cookie Recipe. Thanks! Dawn
Dawn,I make these for the techs at my ISP and they keep asking for them-soaking the raisins really gives them a different flavor as does browning the pecans (or walnuts) and the oats.
Oatmeal Raisin Cookies
3 eggs, well beaten
1 c raisins
1 tsp vanilla`
1c brown sugar
1c white sugar
2 1/2c flour
1 tsp salt
1 tsp cinnamon
2 tsp baking soda
2 c oatmeal
3/4 c chopped pecans
Toast nuts and oatmeal til lightly browned, then cool. Combine eggs, vanilla, and raisins and let soak covered with saran wrap for one hour before mixing into dough.
Cream together butter and sugars; add flour, salt, cinnamon, and soda to sugar mixture and mix well.Blend in egg-raisin mixture, oatmeal, and chopped nuts. Dough will be stiff-roll into balls the size of a walnut, place on ungreased cookie sheet, and flatten with a fork. Bake at 350Â° for 10-12 minutes or til lightly browned.~
Yield: 6 dozen.
The cookie recipe is great! Thank You So Much! I plan to hand deliver them to Florida for sampling:)

I've made that recipe (minus the raisins) & it was the best I've eaten.
Ginger, the Tech I talked to today said that the Raspberry Chip cookies I made at his request were the best cookies he has ever had! LOL
Not a bad idea bribing the techs. I might have to resort to that.
It is a great idea, Ginger-they will fix any problem I have!
One of them even re-installed Windows for me and it didn't cost me a thing. LOL
They are really a nice bunch of kids though.
