Mine has three eggsÃ¢ÂÂ¦.been using it for 50 years.
1 C. sugar
1 C. cake flour or 3/4 C. Gold Medal flour
1 tsp. baking powder
1/4 tsp. salt
1/3 C. water
1 tsp. vanilla
Confectioner's sugar (10 X)
Heat oven 375
Line jellyroll pan with aluminum foil. greaseÃ¢ÂÂ¦in small mixer bowl beat eggs about 5 min. or until thick and lemon colored and drops from beater in ribbons. Pour eggs into larger bowl. Gradually add granulated sugar. On low speed, blend in water and vanilla. Gradually add flour, baking powder and salt, beating just until batter is smooth. Pour into prepared pan spreading to corners. Bake 12 - 15 minutes or until wooden pick inserted in center comes out clean. Loosen cake from edges of pan. Invert on towel sprinkled with 10X sugar. Carefully remove foilÃ¢ÂÂ¦trim off stiff edges. While hot, roll cake and towel from narrow end. Cool on wire rack. Unroll cake, remove towelBeat 2/3 C jam slightly with fork to soften. Spread over cake. Roll up. Sprinkle with 10X.
