Looking for Red Currant Meringue Cake Recipe
I found a recipe on line many years ago and I can't find it in my collection. I remember the basics, not the proportions and baking temps. I could experiment, but I'm hoping someone has the recipe written down. I searched on line and can't find it.
Basically the cake consisted of two parts. A shortbread like bottom, with distinct lemon rind flavor. That was pressed into a spring form and pre-baked. The top was egg whites and sugar, made stiff and then fresh red currants gently folded in. That was then placed over the (shortbread like) bottom and baked.
Very tart but delicious!
