LOOKING for: Banana Nut Bread

Last year, there was an awesome recipe for banana bread floating around here. Does anyone still have it? Thanks!

This is one I bake and have shared at one of the cooking forums.

Sour Cream Banana Bread

1 cup sugar
2 eggs
1/2 cup margarine
1 tsp. vanilla
1/2 cup sour cream
1 1/2 cups flour
1 tsp. baking soda
1/2 tsp. salt
1 cup mashed bananas (2 rips bananas)
1/2 cup chopped nuts

Grease loaf pans. Cream margarine, sugar, eggs and vanilla. Add dry ingredients, then bananas, nuts and sour cream. Mix well.
Bake at 350 deg. for 1 hour.

It's really a moist bread.

I don't think this is the one I posted before but I made it a month ago & really liked it. Maybe some others will post theirs.
MOM'S BEST BANANA BREAD (2 loaves)
2 1/2 cups sugar
1/2 cup butter or margarine
1/2 cup shortening
3 eggs
1 1/2 cups mashed ripe banana (3 large)
1 tsp vanilla
3 cups flour
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1 1/4 cups buttermilk (or 1 1/4 cups milk + 1 TBL vinegar)
1/2 cup chopped walnuts or pecans

Preheat oven to 350°. Beat first 3 ingredients at medium speed with a mixer until creamy. Add eggs, 1 at a time, beating well after each addition. Add banana & vanilla., beating well. Combine flour, soda & baking powder; add to banana mixture alternately with buttermilk, beating well after each addition. Stir in nuts. Pour batter into 2 well-greased 9x5" loaf pans. Bake for 45-50 minutes or until a toothpic inserted in the center comes out clean. Cool in pans 10 minutes.~~From Thymes & Pleasures

Banana Nut Bread

3/4 cup sugar
1/2 cup softened butter
2 eggs
2 mashed bananas
1/3 cup milk
1 teaspoon vanilla
2 cups all-purpose flour
1/2 cup chopped nuts
1 teaspoon baking soda
1/2 teaspoon salt

Heat oven to 350 degrees F. Grease bottom only of 9X5 or 8X4-inch loaf pan. In a large bowl, beat sugar and butter until light and fluffy. Beat in eggs; blend in bananas, milk and vanilla. Lightly spoon flour into measuring cup; level off. In small bowl, combine flour, nuts, baking soda and salt; mix well. Add to banana mixture; stir just until dry ingredients are moistened. Pour into greased pan. Bake at 350 F for 50-60 minutes or until toothpick inserted in center comes out clean. Cool in pan 5 minutes; remove. Cool completely on a wire rack. Wrap tightly and store in refrigerator.

None of the above recipes mention cinnamon which I always put in my banana nut bread. I also throw in about a tablespooon of cocoa. Gives it a little extra oomph.

Here is a awesome recipe that i make. WE love this bread. Hope you enjoy.

Hawaiian Banana Nut Bread

Ingredients
3 cups all-purpose flour
3/4 teaspoon salt
1 teaspoon baking soda
2 cups sugar
2 teaspoons ground cinnamon
1 cup chopped macadamia nuts
1/2 cup grated coconut
3 eggs, beaten
1 cup vegetable oil
2 cups mashed ripe bananas
One 8-ounce can crushed pineapple, drained
3 teaspoons vanilla extract

Combine flour, salt, baking soda, sugar, and cinnamon. Combine remaining ingredients together; add to flour mixture, stirring just until dry ingredients are moistened. Spoon batter into 2 greased and floured 8-1/2 x 4-1/2 x 3-inch loaf pans. Bake at 350 degrees for 1 hour and 10 minutes. Remove from pans and let cool on wire racks.

Here's one that goes together fast-stays moist .

Diane Home Cookin 4.8 Chapter: Quick Breads

Oatmeal Banana Blueberry Loaf
======================
2 Cups biscuit buttermilk biscuit mix
¾ c. quick oats
2/3 Cup sugar
1 Cup mashed ripe bananas
¼ c. milk
2 eggs
1 Cup blueberries
. Heat oven to 350° .Grease bottom of 9x5x3 loaf pan.

Mix all except blueberries until well blended. Beat vigorously 30 sec. Fold
in blueberries. Pour into pan.

Bake 45-55 min. Cool in pan 10 min-remove from pan & cool completely before
slicing.

I posted this one here last year. It's from Connie over at Mimi's Cyber-Kitchen.

BANANA SOUR CREAM LOAF

2/3 cup butter or margarine
1-1/2 cups sugar
2 eggs
1-1/2 cups mashed bananas (about 3)
2-3/4 cups flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 cup sour cream
1 cup chopped pecans or walnuts

Cream butter and sugar until light and fluffy. Add eggs and bananas and beat until well blended. Sift together flour, baking powder, soda and salt. Add alternately with sour cream to banana mixture, stirring just to blend. Stir in nuts. Spoon batter into greased and floured (I just use Pam) loaf pan.
Optional LBake at 350° for 60 minutes or until toothpick comes out clean. Let stand in pan for at least 10?15 minutes.

Tip: Add 1/2 cup or more rough chopped maraschino cherries to mixture. Wow!
