Recessed- Baffle or directional trim??

I am trying to decide on recessed lighting for my kitchen and family room. What are the pros and cons of the baffle verus the directional trim?

I assume the baffle is a straight downlight and the directional trim is a wall washer. One lights a task area and the other lights a wall. At kitchen counters it is often necessary to decide how much of the upper cabinets you want to light and how much of that can show a light scallop.
