porcelain tile and Schluter

We're tiling the surround around our tub using porcelain tile. Since the porcelain tile we're using doesn't have the capability to sand the edge to make it look like a bullnose we thought we'd use the bullnose tile.
The first "step" is 3" according to the plans (see attached)
But the bullnose is 2 1/2" wide. The other option is to use Schluter but none of them match the color tile we have for that area.
Also if we start to mess with dimensions, because we're also tiling the floor, the design of the floor would have to be changed - we really don't want to do that
Any suggestions?

If it is a contemporary look you are after, you could consider one of the metal Schluter edges. You could then match the finish to the finish of your plumbing fixtures.
