It's 4.5" wide and I'd rather it were more like 2.5". Can I cut it? If so, would I take a strip out of the center to keep the sides intact? Thanks for any advice.
I think that it might be a bit difficult to get an even cut. When I built a Kerdi shower I used a 2x6 on end and covered it with drywall, then Kerdi.

It is actually pretty easy to cut. It's just foam. However, it has tons of holes through the middle, so I don't think cutting it lengthwise is a good idea. It just would never be as strong as it is intended to be.
Besides, the premade curb is supposed to be a time saver. You are paying extra so you don't have to do build one yourself. If you are going to start chopping it up, you may as well just save the money and use a 2x and some extra cement board. A 2x + 1/2 board on each side makes a 2 1/2 curb.

And if you already mistakenly bought it and cut it to length, only then to decide you wanted it marrower (oops)... would you still use the wood?
Well, before I threw it in the trash, I'd try to cut it and see what happens. It's only going to take a minute or 2. I just don't think you are going to be happy with the results. I think you'll probably be able to snap it with your fingers when it is that thin.
