Charcoal smoker - Temp gauge question
I've got a Brinkman Gormet Charcoal Smoker as a replacement to an identical one that finally rusted out. Don't know model number, but it's the vertically oriented tube with fire pit at bottom and water pan in the middle.
The lid has a thermometer marked "Warm-Ideal-Hot". The old lid is still OK, and for whatever reason, sometimes I use the old lid, sometimes the new one.
I'm getting ready to use it and I just noticed that the two thermometers differ widely. As a test, I removed them both and used aluminum foil to suspend them in the steam from a pot of boiling water. One of them barely came up to the "Ideal" and the other got almost into "Hot". Which one should I believe...assuming that the water steam should have been roughly 212 F?
