How do you Smoke without cooking??
Howdy! Hope ya'll can help clear this up for me. I've got a brisket recipe that calls for baking in a low 200 oven for 3 or 4hrs, then to smoke on a pit or smoker for 4hrs basting every 20 mins. It also says "Do not cook, smoke only using hickory chips" How am I supposed to do that? I have a cylinder Brinkman Smoke and Grill. To smoke you're supposed to put the coals in the bottom, waterbath with chips in a bowl on top of that, and the food on a grill above the waterbath. So how am I supposed to smoke without cooking?? Any help greatly appreciated, Cory
