Little kitchen tricks

Hi folks -- I am new here (usually in kitchen forum) and I'm hoping to learn some tricks and time-saving cooking hints that you all use. Here's one that recently dawned on me: Instead of watching a tiny container of leftover vegetable become a fuzzy friend in the refrigerator, I keep a 1-quart Tupperware container in the freezer and labeled it "Make soup!" Into this I toss any left-over vegetable that is not destined for a planned-over. When this is full, I make soup. Why did it take me over 40 years of cooking to think of this? What's your favorite kitchen trick?
